Apple and Cinnamon Muffins


2 cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
2 cups diced apples
1/2 cup of dried raisins
½ cup (1 stick) unsalted butter (melted)
1 cup brown sugar
2 large eggs (beaten)
2 teaspoons pure vanilla extract
½ cup milk

Mix all the dry ingredients together. Add the eggs, butter, vanilla and milk and mix well until the mixture becomes quite smooth. Add the apples and raisins. Place the mixture in 12 cupcake cases. Cook in a preheated oven at 375F for about 30 minutes or until the tops are golden brown.
