1 boneless pork loin roast (2 to 3 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
3 medium apples, peeled and sliced, divided
1/4 cup honey
1 large white onion, chopped
1 tablespoon ground cinnamon
1/2 tsp ground nutmeg
250ml chicken stock
Sprinkle roast with salt and pepper. In a large pan brown roast in oil on all sides. Cut slits in sides of roast (5-10 depending on how long your roast is) and place an apple slice into each. Layer the rest of the applies in the slow cooker. Place the roughly sliced onion on top of the apples. Put the roast over apples and pour over the stock. Drizzle with honey. Sprinkle with cinnamon and nutmeg. Cover and cook on low for 8 hours. The meat is then beautifully tender. Serve with mashed potatoes or a potato gratin.
