Cheese and Onion Quiche


Olive oil
1 large onion chopped
One sheet of pastry
6 large free range eggs
1 cup of sharp cheddar cheese
1/2 cup parmesan

Heat the oil in the pan and add the chopped onion until brown (about 15 minutes). Meanwhile, lay the pastry sheet in an oven proof quiche dish. When the onions are done, spread the onions evenly over the bottom of the pastry. In a separate bowl, mix the eggs and cheese all together. Once well beaten, pour over the onions. Bake in a preheated oven at 375F for 35 minutes or until the top is golden brown.
