I certainly didn’t invent this recipe but I was recently reminded of how good it makes tomatoes and peppers taste! Even my daughter ate some. Makes a great addition to pasta dishes and you can freeze them or blend them and add them to pasta sauce! We have it with roast pork and mashed potatoes. Recipe? Simple. Cut cherry tomatoes in half, and cut small sweet peppers in half. Lay them out in an oven proof dish. Drizzle with olive oil and season with salt and pepper. Cook in a preheated oven at 250f for 3 hours. They come out sweet and even tastier!
