Caramelised Red Onion, Ham and Parmesan Quiche

My mum arrives today to spend some time with the family, so we’re going to be out and about a lot and not necessarily have endless time to cook meals when we get home from our days out so I am slowly making a few things we can feed Poppy and put in the oven for us to maximize the time we have together (and to maximise the time we have to sip wine!).

I had some ham and a red onion left over to use in the fridge (we used two red onion slices for burgers the other night) so I made a Caramelised Red Onion, Ham and Parmesan Quiche. I know it sounds a little strange to have sweet onions in there but it’s delicious and will be great for Poppy’s lunches! She has pretty much polished off the roasted salmon from the other day!

Ingredients

Olive Oil
Salt and Pepper to season
1 chopped red onion
1 tablespoon of honey
2 tbsp whipping cream
6 eggs
1/2 cup sharp cheddar cheese
1/4 cup parmesan
6 very thinly cut ham slices chopped into small pieces
1 pastry case

Brown the red onions in a frying pan. Season with the salt and pepper. Add the honey and cook until the honey has been absorbed by the onions (about 1-2 minutes). Leave them to cook while preparing the eggs.

In a separate bowl, mix the eggs, whipping cream, cheddar, parmesan (keeping a hint of parmesan to sprinkle on the top) and ham.

Add the onions to the eggs in the bowl. Mix well. Pour into the pastry case. Cook in a preheated oven at 350F for 25-30 minutes or until the top is golden brown.
