Apple, Cranberry, Banana and Oat Muffins

Time for some healthy treats for snack time for Poppy!

Ingredients

1 1/4 cups whole wheat flour
2 tablespoons of honey
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon ground all spice
1/2 teaspoon coarse salt
1 cup old-fashioned rolled oats
1/2 cup raisins
2 tablespoons dried cranberries
3 tablespoons extra-virgin olive oil
1 large egg
1/3 cup skim milk
1 medium ripe banana, mashed

In a large bowl, mix all of the dry ingredients. Add the wet ingredients. Mix well. Spoon into cupcake cases (makes about 12-18 cupcakes depending on how big your muffins are). Cook in a preheated oven at 350F (about 20 minutes) or until a toothpick comes out clean.
