Whole Wheat Apple, Raisin and Cranberry Muffins

As the last ones were such a success I’ve made another based on a different recipe to change it up a bit! Makes 12 muffins.


1/2 cup brown sugar
2 eggs
1/2 cup canola oil
1 tsp. vanilla
3 whole wheat flour
2 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 cup applesauce
1 cup 2 % milk
2 large apple peeled and chopped small
1 cup raisins
1/2 cup dried cranberries

Preheat your oven to 375F degrees.
Mix together all the wet ingredients. Add the dry ingredients.
Fill your cupcake cases to the rim, and bake for 16-18 minutes or until a tooth pick inserted into the muffin comes out clean and the edges are golden brown.
Serve warm or room temperature.

To freeze, cool completely and then store in a freezer friendly container or plastic bag.
