I made this last night to accompany our steak with mash potatoes and sweet potatoes and it was delicious! The dressing goes so well with it too. I’ve had the same salad for lunch today. It’s a definite winner even though I would never normally have thought of putting those ingredients together! This served 2 people as a side salad with a main course.
1 romaine lettuce
1 avocados, peeled and cut into cubed
2 handfuls strawberries, sliced
1 nectarine, sliced
25g blue cheese
For the dressing
4tbsp olive oil
2tbsp balsamic vinegar
4tbsp orange juice
salt and pepper to taste
Scatter the salad leaves onto a large platter, followed by the salad ingredients. Crumble the blue cheese over. Mix all the ingredients for the dressing and drizzle over the salad.
