Chocolate Cupcakes for Halloween

I made some chocolate cupcakes with vanilla icing for Halloween … not that we had any trick or treaters since we were out most of the evening. So that’s more cupcakes for us! These cupcakes are moist and wonderfully chocolatey – I added some chocolate chips in there just for good measure!

Ingredients

1 1⁄3 cup all-purpose flour
1⁄4 tsp baking soda
2 tsp baking powder
3⁄4 cup unsweetened cocoa powder
1⁄8 tsp salt
3 tbsp butter, softened
1 1⁄2 cup white sugar
2 egg
3⁄4 tsp vanilla extract
1 cup milk
1/2 cup of chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together flour, baking powder, baking soda, cocoa and salt. Set aside. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well with each addition, then stir in vanilla extract. Add flour mixture alternately with the milk; beat well. Add the chocolate chips and mix well. Fill the muffin cups 3/4 full. Bake for 15 to 17 minutes until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.

Vanilla Frosting

Ingredients

2 cups confectioners’ sugar
2 tablespoons butter, softened
2 tablespoons milk
1/2 teaspoon vanilla extract

Directions

In a bowl, combine the sugar, butter, milk and vanilla. Beat on medium speed until smooth and fluffy. Spread over bread. Yield: 1 cups.
