So I had some sausage meat left over from making some more sausage rolls the other day and I made this for Poppy and I for lunches and she adores it!
150g seasoned Italian sausage meat (skin ofF)
1 large sweet potato
1 tin Heinz Baked Beans
1/2 cup of sharp cheddar cheese
1/2 cup of provolone cheese
Cook the meat in a frying pan until fully cooked. Place in the bottom of an oven proof dish. Empty the tin of beans on top. In the meantime, peel, chop, and cook the sweet potato until soft. Mash with a potato masher until you obtained the desired ‘mashed potato’ consistency. Place the mashed potato over the beans. Sprinkle with cheese. Cook in a preheated oven at 350F for 30 minutes or until the sides are bubbling.
Easy, yummy, great on a cold grey day!
