Chicken, bacon, sweetcorn and asparagus pie

So the cold has set in. It’s below freezing in Nashville and the fire is on. So I thought for tonight we would have some comfort food – pie.

Chicken, bacon, sweetcorn and asparagus pie

Ingredients

1 tbsp olive oil
1 yellow onion
1 red onion
4 minced garlic cloves
2 chicken breasts cut into small cubes
6 rashers of bacon
1/2 cup sweetcorn
1/2 cup chopped asparagus
1 tsp dried thyme leaves
1/2 cup sharp cheddar
1 cup of béchamel (white) sauce
Pie shell
1 puff pastry sheet
Salt and Pepper to season

Soften the onions and garlic in some olive oil. Add the chicken, bacon and thyme. When the chicken is cooked through – add the sweetcorn and asparagus. When all cooked, place into a pie shell. Pour the béchamel sauce over the chicken, and sprinkle with the cheese. Cover with a puff pastry sheet. Cook in a preheated oven at 375F for 45 minutes or until the crust is golden brown on top. Serve with chips, peas and gravy. What an English Treat 🙂
