No Crust Oven Quiche – for those days when there is not quite enough time to prep and cook food!

This is a favorite of mine for quick lunches for Poppy and I when we’re home. It’s like a quiche but perfect if you’ve got no pastry and you can make it in a loaf tin.

Ingredients

6 eggs
1 handfulls of fresh spinach (stems trimmed)
4 slices of ham, chopped into small pieces
1/2 cup sharp cheddar cheese
1/4 cup parmesan to sprinkle on top

Directions

Spray the loaf pan with cooking spray. Mix all the ingredients together directly in the loaf pan and sprinkle the parmesan on top. Cook for 20 minutes or until the eggs are fully cooked in a preheated oven at 350F.

Enjoy! I serve it with nice salad for me and some fruit for Poppy!

  1. Perfect what i don t like about a quiche is the pastry…never thought of doing one without…..so it s a bit like a french savoury flan….
