I made our favourite roasted potatoes. I used to swear by using goose fat to make our roasted potatoes but I’ve yet to find that in the US, so we’re back to a classic – bacon and roasted potatoes!
500g roasted potatoes
200g bacon rashers, cut into small pieces
salt and pepper to season
Cook the bacon in a pan until nice and crispy. Meanwhile, wash your potatoes. Lay your potatoes in an oven proof dish and pour over the bacon and bacon grease. Mix the potatoes to make sure they are all coated with at least a little grease. Cook in a preheated oven at 400F for 45 minutes or until golden brown.
Enjoy with Sunday roast or the pork recipe I made earlier!
