Chicken Adobo from the Philippines

I tried something totally new today – a recipe from the Philippines. It was delicious and so simple. Another slow cooker favourite. Enjoy!


1/2 cup of dark soy sauce
1/2 cup white vinegar
1 onion (chopped)
2 cloves of garlic (minced)
1 lbs of pork filet
1 tsp garlic powder
2 bay leaves
Salt and pepper to taste

Chop up the onions and garlic, set aside. Spray the slow cooker with vegetable spray. Lay the onions on the bottom. Add all of the ingredients. Lay the pork fillet on top. Cook on low for 6-8 hours or high for 4 hours until meat is tender and cooked thoroughly. Serve over rice with steamed vegetables. Refrigerate left overs in a covered container and heat up either over a stove top or in microwave.
