Chicken and Bacon Pasta

A week day favorite!

Ingredients

2 chicken breasts
1tsp dried rosemary
1tsp olive oil
1 chopped medium red onion
5 rashers of bacon cut small
Your favourite pasta
Parmesan to serve!

I roast the chicken before hand to save some time when the evening hour with a toddler comes and we’re all starving! I roast the chicken breasts at 350F for 20 minutes or until fully cooked through. I then cut it into small pieces ready to add to the pasta.

In the evening when you’re ready to make dinner, fry the onions in a drop of olive oil, and add the bacon. Cook until it starts to brown. Add the chicken to reheat it.

Cook the pasta while the onions and bacon are cooking.

Once the pasta is cooked, drain it and add it to the frying pan with the bacon and onions.

Sprinkle with parmesan and you’re done!
