Apple, Banana, Blueberry and Raisin Muffins

I made these for a morning treat with Poppy. They don’t require any sugar so they are not too sweet but just lovely and fruity. I halved the original recipe to make six muffins but left the original measurements for the fruit as I used whole wheat flour and didn’t want them to turn out too dry. They worked really well and make a delicious and not too indulgent snack.


1 1/8 cups whole wheat flour
2 eggs
1 apple peeled and finely chopped
1 soft and ripe banana
1/3 cup blueberries
1/4 cup vegetable oil
1/3 cup water
1/4 tsp baking soda
1 teaspoon of vanilla extract
1 heaping tablespoon cinnamon
1/4 cup of raisins


Blend all of the ingredients apart from the blueberries and the raisins in the food processor until smooth. Add the blueberries and the raisins and mix well. Place the mixture in cup cake cases in a cupcake tin and cook in a preheated oven at 350F for 17 minutes or until a toothpick comes out clean.
