I love making this in batches and freezing some for days when we’re in a hurry or I can’t be bothered to cook. The longer you cook it, the nicer it gets.
1 tbsp olive oil
1 chopped onion
2 tbsp chopped garlic
500g mince beef (the least fatty you can get)
Salt and Pepper to season the mince
1 tin of chopped tomatoes
2 tsp of Lea & Perrins Worcestershire Sauce
2 bay leaves
2 tsp chilli flakes
1tsp dried basil (or fresh basil if you have some)
1tsp parmesan to sprinkle on top
Brown the onions and the garlic in the olive oil. Add the mince and season it. Cook until the mince is all browned. Add the remaining ingredients. Cook on low heat (slowly bubbling) for at least 1.5 hours. Serve up with some parmesan and some whole wheat pasta and roasted vegetables.
