The sun is out again so we’re having something fresh and light for dinner! This recipe is intended for an outdoor gas grill but I’ve amended it slightly to cook it indoors. I served it with roasted potatoes, courgettes and yellow squash.
6 tablespoons honey
6 tablespoons reduced-sodium soy sauce
2 teaspoons freshly grated lime zest
6 tablespoons lime juice
1 teaspoon crushed red pepper
2 chicken breasts diced into 1inch cubes (you could use up to four with the marinade but there is only two of us :-))
Mix the honey, soy sauce, lime zest, lime juice and crushed red pepper in a large bowl. Add chicken pieces; stir to coat. Cover and refrigerate for 2 hours, stirring occasionally.
When you’re ready to cook the chicken, place it in a frying pan with a teaspoon of olive oil and cook the chicken through.
Meanwhile, place the marinade in a small saucepan over medium-high heat and boil until reduced by about half and thickened to a glaze, 8 to 10 minutes (about the time it took to cook the chicken in the frying pan).
Once the chicken is cooked, serve and pour some marinade on each portion and enjoy!
